Cashew Tuna Recipe
Ingredients 7 ounces tuna in
water, drained, flaked 1 cup celery, diced 1/2 cup onions, minced 3
tablespoons margarine 1 can cream of mushroom soup 1 16 ounce can bean
sprouts, drained 1 tablespoon soy sauce 1 cup cashews, coarsely chopped
1 can chow mein noodles
Directions Combine all ingredients except chow
mein noodles in crockpot; stir well. Cover and cook on low setting for 4 to 9
hours. Serve over chow mein noodles. Sue

Sue's Tuna Salad with Lemon Recipe
Ingredients 1 (6 ounce) can chunk light tuna, drained 3 tablespoons
mayonnaise 3 tablespoons sour cream 1/3 cup finely chopped celery 1
tablespoon chopped onion 1 tablespoon chopped green bell pepper 1
tablespoon pickle relish 1/2 teaspoon salt 1/2 teaspoon lemon pepper
Directions In a medium bowl combine tuna, mayonnaise, sour cream, celery,
onion, green bell pepper, pickle relish, salt and lemon pepper. Stir until
thoroughly combined. Cover and refrigerate for 30 minutes. Serve on whole wheat
toast with lettuce and tomato. 4 servings. Sue

Sue's Tuna Salad Recipe
Ingredients 1 can drained tuna fish 1 cup chopped celery 1 cup shredded
carrots 1/4 cup chopped onions 1 cup mayonnaise + 1 Tbl mustard 1 can
Chinese noodles (15-20 oz) Sliced almonds

Sue's Tuna Pasta Salad Recipe
Ingredients 1 box
tri-color spiral pasta, cooked 2 (6 ounce) cans tuna with water 1/2 sm.
onion, grated 1 c. mayonnaise 1 T. dill weed (dried)
Directions
Combine ingredients in bowls. Add more mayonnaise if needed to moisten slightly
prior to serving. Sue

Sue's Tuna Noodle Dish Recipe
Ingredients 1 bag wide egg noodles 1 (16 oz) can green beans, drained
2 tbsp margarine 1/4 c grated parmesan cheese 1(6 oz) can tuna, drained
Directions Cook noodles according to package directions; drain. Run cold
water over to stop cooking. Stir in margarine until melted. Mix in green beans
and tuna. Sprinkle with parmesan cheese. Good cold, warm or hot. Sue

Mary J's Broccoli Cole Slaw Recipe
Ingredients 1 pkg. broccoli cole slaw 3/4 C. sliced almonds 3/4 C.
sunflower seeds 1 pkg. Ramen noodles (no seasoning) 3 green onions,
chopped 3/4 C. oil 1/2 C. sugar 1/4 C. vinegar 1 T. soy sauce
Directions Saute in butter almonds, sunflower seeds, noodles and onions.
Combine with broccoli slaw mix. Combine oil, sugar, vinegar and soy sauce. Pour
over salad. Toss to coat. Mary J

Mary J's Broccoli and Rice Casserole Recipe
Ingredients 10 oz. pkg. chopped broccoli 1/2 c. chopped celery 1/2
c. chopped onion 1/4 c. margarine 1 can cream mushroom soup 6-8 oz.
grated cheese 1-1/2 c. cooked rice
Directions Pour 1 cup boiling
water over broccoli and cook five minutes. Drain. Saute celery and onions in
margarine, when tender add to broccoli. Add mushroom soup, cheese and rice. Mix
well. Put in flat casserole dish, cover and bake at 375 degrees for 45 minutes.

Mary J's Chicken with Broccoli Alfredo Recipe
Ingredients 6 oz. uncooked fettuccine 1 c. fresh or frozen broccoli
flowerets 2 T. butter or margarine 1 lb. chicken breasts, cubed 1
(10-3/4 oz.) can mushroom soup 1/2 c. milk 1/2 c. grated Parmesan cheese
1/4 tsp. freshly ground pepper
Directions Prepare fettuccine according
to package directions. Add broccoli for last 4 minutes of cooking time. Drain.
In skillet, over medium heat, heat butter and chicken and cook until browned,
stirring often. Add soup, milk, cheese, pepper and fettuccine mixture and cook
through, stirring often. Serves 4. Mary J

Sloppy Joe Burgers Recipe
Ingredients 1 lb.
ground beef, browned 1 1/2 c. chopped onion 1/2 c. chopped celery 1/2
c. chopped green pepper 1 tsp. salt 1 tsp. pepper 1 can tomato soup
1 T. barbecue sauce 1 T. worcestershire sauce
Directions Brown
ground beef then add onion, celery, green pepper, salt and pepper. Cook until
vegetables are tender and soft. Add 1 can tomato soup, barbecue sauce, and
worcestershire sauce. Cover and simmer 30 minutes. Serve on toasted bun halves.

Grandmother's Swiss Steak Recipe
Ingredients 3-4 lbs. round steak 1 c flour 1 can diced tomatoes
1/2 tsp. salt 1 tsp. pepper 1 large onion 1 tablespoon olive oil
Directions Cut round steak inserving size. Dredge into the flour, and
brown in hot olive oil. Put in a Dutch Oven, add the tomatoes, salt and pepper.
Chop the onion and add to the Dutch Oven. Cover, and cook in a slow oven at 350
degrees for 4-5 hours. Ana

Ana's Salisbury Steak Recipe
Ingredients 1 can mushroom soup 1-1/2 lb. ground beef (may use 1/2
ground turkey) 1/2 c. fine dry bread crumbs 1/4 c. finely chopped onions
1 egg slightly beaten 1/3 c. water
Directions Mix thoroughly 1/4 c.
soup, beef, break crumbs, onion and egg; shape firmly into 6 patties. In
skillet, brown patties (use shortening if necessary) pour off fat. Blend in
remaining soup and water. Cover; cook over low heat for 20 minutes or until

Oma's Okra Hush Puppies Recipe
Ingredients 1/2 c
white corn meal 1/2 c all-purpose flour 1 egg, beaten 1 sm onion,
grated 1 tsp garlic powder 1/4 tsp black pepper 1/4 tsp salt 1/2 c
buttermilk 1 c cut okra vegetable oil
Directions Combine all
ingredients except oil just until moistened. Heat oil deep enough to fry hush
puppies in heavy skillet. Drop mixture by teaspoonfuls into deep hot oil. Fry

Oma's Fried Okra Salad Recipe
Ingredients 4 c.
sliced okra 1 med. onion finely chopped 2 med. tomatoes, diced 1 red
bell pepper, diced 1 green bell pepper, diced salt to taste pepper to
taste cornmeal
Directions Sprinkle okra with salt, pepper and
cornmeal. Fry until crisp. Drain okra after frying. While okra is cooking; cut
up tomatoes, onion, bell peppers. Mix tomatoes, onion, bell peppers together,
salt and pepper to taste. When okra is done, pour over vegetables in a salad
bowl. Cover tightly and allow to stand 5 min. Remove cover mix lightly and
serve, hot or cold. Oma in New Orleans

Fried Okra
Recipe
Ingredients 1 lb fresh or frozen okra, cut
in bite size pieces 1-1/2 c self-rising corn meal 1/4 tsp salt 1/8 tsp
pepper oil
Directions In large bowl, sprinkle salt and pepper over
okra. Heat oil in heavy skillet. Pour corn meal over okra, stirring well to coat
all of okra. Place okra in hot oil and cook over medium heat til done, about
12-20 minutes. If you prefer baking, after battering okra and placing in
skillet, set the skillet in 350 degree oven for 30 -40 minutes. Stir once.

Ingredients 1 pkg.

Someone recently mentioned that they
could no longer find pimento cheese. I thought I would share this recipe in case
she or anyone else wanted to try it. It can also be used to stuff celery. I also
have another pimento cheese spread recipe, but before I share it I need to
confirm the size of the evaporated milk used in the recipe. It is very old and
refers to a tall can rather than listing ounces or cups. Robbie IN
Robbie's Pimento Cheese Spread Recipe
Ingredients 1 1/2 lbs. sharp cheddar cheese, grated 8 oz. cream cheese
3/4 c. Mayonnaise 2 7 oz. jars diced pimento, drained 1/2 tsp. black
pepper
Directions Beat with mixer the cheddar and cream cheese
together. (Do not over beat.) Stir in mayo, pimento and pepper, blend well. This
can be used for party sandwiches or put in a crock Robbie IN

Here are two more ideas for stuffing celery. You can also stuff celery with

Deviled Stuffed
Celery Recipe
Ingredients 1 (3 oz.) pkg. cream cheese 2 (3 oz.)
cans deviled ham 1 tbsp. grated onion 1 tsp. vinegar 1/4 tsp.
Worcestershire stalks of celery
Directions Combine all ingredients,
except celery. Chill ingredients several hours or overnight to blend flavors.
When ready to serve, wash stalks of celery and cut into 2 to 3-inch lengths.
Drain celery and dry. Stuff with filling. Makes 20 to 25 pieces. Robbie IN

Shrimp Stuffed Celery Recipe
Ingredients 1 (4 1/2 oz.)
can shrimp, drained and finely chopped 1 (3 oz.) pkg. cream cheese 2 tbsp.
mayonnaise or salad dressing 1 tbsp. finely chopped onion 1 tbsp. minced
parsley 1 tbsp. finely chopped green pepper 1 tbsp. finely chopped celery
1 tbsp. finely chopped green olives Dash of bottled hot pepper sauce Dash
of Worcestershire sauce Dash of salt and pepper Celery
Directions
Combine all ingredients except the celery. When ready to serve, wash stalks of
celery and cut into 2 to 3-inch lengths. Dry celery. Stuff with filling.
Refrigerate any leftovers. Note: Can substitute diced crab meat for the shrimp.
