The site says not secure. That means

It was so hot today that I had to
use pot holders to drive my car because the steering
wheel was to hot to touch. The temperature the past
couple of days was 108, 110 and today it was 99. I think
the difference in today's temperature was the humidity.
The past few days it was around 10 or 15% but today it
got up to 35%. It seems much hotter as the humidity goes
up. There is a thunderstorm coming in from the west.
Hopefully I can get this newsletter posted before it

I would like to
know if anyone has the Kraft recipe for Chicken N' Olive
Broil. This is a very old recipe that was probably part
of a Kraft ad, possibly for Miracle Whip.It is an
excellent, easy recipe that I used for years when my son
was young. It contains chicken, ripe olives, Miracle
whip, onion, green pepper ,egg whites & pumpernickel
bread slices. However, there is one ingredient- cheese -
that is not included in my recipe. If anyone has the
recipe, I would appreciate knowing the kind and amount
of cheese. Thank you!

Fettuccine
and Shrimp Platter Recipe
1/2 lb. pkg.
Spaghetti, fettuccini or linguini 3 Tbl.
butter 3 Tbl. olive oil 1/2 lb. med. shrimp,
shelled and deveined 1 clove garlic, minced 1/3 c.
grated Parmesan cheese 1/4 c. chopped fresh dill
salt to taste 1/2 tsp. coarsely ground pepper
Prepare pasta according to package and drain. In a large
skillet heat oil and butter. Add shrimp and garlic; cook
and stir until shrimp are opaque. Combine hot cooked
pasta, shrimp mixture, cheese, dill, salt and pepper.

Fried Catfish with Hush Puppies Recipe
Combine 1 1/2 cups Corn Flour
1 ts Salt 1/2 ts Black pepper 1/2 ts Lemon pepper
1/2 ts Cayenne pepper
Catfish
Dip Fish in olive oil then
in flour mix & in the pan fry for 3 1/2 minutes then
turn & add. 1/2 cup of cut Onions. 1/2 cup of
sliced Mushrooms. Cook for 3 1/2 minutes more till
the Fish are golden. Granish with sliced Lemon &
Parsley. Serve with Hush Puppies & French Fries
Hush Puppies
1 cups corn meal 3/4 cup
flour 1 tsp baking powder 1/2 tsp salt 1/2 tsp
black pepper 1 onion chopped 2 eggs 3/4 cup
milk
Heat oil to temperature for frying. Mix all
ingredients together in a bowl. Drop by teaspoonfuls
into hot cooking oil. Fry a few at a time, so they don't
stick together. When they turn golden brown they are
usually done. Dry on paper towels. Susan

Lime Pie Recipe
8 oz. cream cheese
(softened) 1 1/4 cup (14 oz. can) sweetened condensed
milk 1 cup undiluted evoparated milk 1/2 cup lime
juice 1 prepared 8 inch pie crust
In a small
mixer bowl, beat cream cheese until smooth. Gradually
add sweetened condensed milk and evaporated milk. Beat
until smooth. With mixer on medium speed, add lime juice
and beat for 1 minute. Pour into pie crust. Freeze for
at least 2 hours. Let stand at room temperature for 10
to 15 mintues and garnish with lime slices, berries or
mint sprigs before serving.

Butterfinger Pie

1- 8oz package of
cream cheese, softened 1 bag of snack size
butterfinger bars 1 large tub of cool whip, thawed
1 Keebler graham cracker crust
Directions: Crunch
up the butterfingers into small pieces (make sure all
the pieces are small > can put in a zip lock baggie to
crush up!). In a large bowl, beat cream cheese until
smooth and add Butterfingers. Fold in thawed Cool Whip.
Put mix in shell and let it firm in fridge, It is best
to make it the day before you plan to eat it. If you are
unable to, put it in the freezer to firm. Mary J

Sour Cream Pie Recipe
1 prepared pie crust 4 cups
berries 1 cup sour cream 1 1/4 cups sugar, plus 2
T, divided 1 cup all-purpose flour 1/4 t. salt
2 T. granulated sugar
Fill pie crust with
berries, then combine sour cream, sugar, flour and salt.
Pour over berries; sprinkle with remaining 2 T. sugar.
Bake until topping is lightly browned.

Cream Apple Pie Recipe
2 eggs 1 cup (8 oz)
sour cream 1 cup sugar 6 T all-purpose flour,
divided 1 tsp vanilla extract 1/4 tsp salt 3
cups chopped, peeled cooking apples 1 unbaked pie
shell (9 inches) 3 T butter or margarine, melted
1/4 cup packed brown sugar
In a large bowl, beat
eggs. Add sour cream. Stir in sugar, 2 tablespoons
flour, vanilla, and salt. Mix well.
Stir in
apples. Pour into pie shell. Bake for 15 minutes at 375
degrees. Combine butter, brown sugar, and remaining
flour. Sprinkle over top of pie.
Return to
oven for 20-25 minutes or until filling is set.
Yield: 8 Servings

Cauliflower Casserole Recipe
1 lb. cauliflower florets 2 tsp. vegetable oil
1/2 onion, diced 1/4 lb. canned mushrooms, drained
11 ounces can cream of mushroom soup 1/3 cup heavy
cream 1-1/2 cups cornflakes, crushed 1-1/3 cups
grated Parmesan cheese Preheat oven to 350°F. Place
cauliflower in a steamer basket over boiling water.
Cover pan and steam 10 minutes or until tender. Drain
and arrange in a buttered casserole dish. Heat oil in a
heavy nonstick skillet over medium heat. Sauté onions 4
minutes, or until soft. Add mushrooms, soup, cream, and
salt and pepper to taste. Pour over cauliflower. Combine
cornflakes and Parmesan in a bowl and sprinkle over
cauliflower. Bake 10-12 minutes or until top is golden.

Cauliflower with Cheese Sauce Recipe
2 reg sized packages frozen cauliflower 2 T
butter 2 T all-purpose flour 1 cup milk 1 1/2
cup shredded cracker barrel vermont white cheddar cheese
In a small saucepan melt the butter and stir in
flour and pepper. Add milk all at once. Cook and stir
over medum heat till thickened and bubbly and cook for
one more minute and then gradually add the shredded
cheese. 2. Place cooked cauliflower into baking dish and
pour cheese sauce all over. Bake in 350 oven for 15-20
minutes.

Baked Onions Recipe

sweet onions 1/4 cup balsamic vinegar 1/4 cup
honey 1/8 teaspoon fresh chopped tarragon
Preheat oven to 350 degrees F (175 degrees C). Peel
onions and make two cross cuts on the top of the onion.
Place in a clay cooker or casserole dish. Mix together
the Balsamic vinegar, honey and tarragon. Pour over
onions and marinate for 1 hour.
4 Bake for 30 to
40 minutes or until onions are tender.

Vegetable Enchilada Wedges Recipe
Olive oil cooking spray 10 (5-inch) corn
tortillas 1 tsp. olive oil 2 medium zucchini,
washed, trimmed and shredded on a cheese shredder
(about 2-1/2 cups) 1 clove garlic, crushed through a
press, or 1/4 tsp. garlic powder 1/2 red bell
pepper, stemmed, seeded and diced 1 (9-ounce) box
frozen whole kernel corn 1 (16-ounce) can low-salt
black beans, drained 1/2 tsp. ground cumin 1/4
tsp. salt 1/2 cup light sour cream 1 (16-ounce)
jar hot or medium salsa 4 ounces sharp cheddar
cheese, shredded (about 1 cup)
Heat the oven
to 350 degrees F. Coat a 9 or 10-inch pie pan with olive
oil cooking spray and set aside.
In a large,
nonstick skillet, heat the olive oil over medium heat.
Add the zucchini and garlic and cook 4-5 minutes, until
the zucchini is limp and moisture begins to evaporate.
Stir frequently. Stir in red pepper, corn, black beans,
cumin and salt; cook 4-5 minutes longer. Remove from
heat and stir in sour cream. Set aside.
Arrange 4
of the tortillas in an overlapping circle across the
bottom of the prepared pie pan. Spoon 1/3 of the
zucchini mixture over the top, drizzle with about 1/3 of
the salsa and sprinkle lightly with cheese. Top with
three more tortillas, and another 1/3 of the zucchini
and salsa. Finish with remaining tortillas, zucchini,
salsa and cheese. Bake 40-45 minutes or until top is
brown and the mixture is bubbling. Allow to stand at
least 10 minutes before cutting. 8 servings Linda

Broccoli Ranch Stuffed Baked Potatoes
Recipe
4 large potatoes 2 tablespoons butter
1 small onion, chopped 1 (10 ounce) package chopped
frozen broccoli, thawed 1/2 cup ranch-style salad
dressing 1 tablespoon vegetable oil 2 teaspoons
dried parsley salt and pepper to taste
Preheat
oven to 425 degrees F (220 degrees C). Pierce the skin
of the potatoes with a fork.
Microwave pierced
potatoes on HIGH for 12 minutes. Place partially baked
potatoes in the preheated oven and bake for 15 minutes.
Slice off potato tops, scoop out the bulk of the
interior of the potato being careful to leave the potato
skins intact. In a medium bowl, mash the removed potato
interior.
Heat a small skillet over medium heat,
stir in butter. Saute onions in the skillet until
tender, about 5 minutes.
Combine onions,
broccoli, and ranch dressing with the mashed potato.
Brush the outside of the potato skins with oil. Spoon
potato mixture into the skins. Arrange stuffed potatoes
on a cookie sheet.
Bake potatoes for 15 minutes
in the preheated 425 degrees F (220 degrees C) oven, or
until heated through. Season with salt, pepper, and
parsley. Makes 4 servings
