When is my Steak Done?:
The most critical point when preparing steak is when
you remove it from the heat source---it keeps on cooking
internally for a few minutes. Use an instant-read
thermometer to test--- 135º is rare; 145º is
medium rare; 155º is medium
Tips and Hints
To neutralize burnt food odors in the house...mix
1/2 cup whole cloves with 2 cups water in a sauce pan
and bring to a boil. Simmer cloves for 15-30 minutes.
The house smells wonderful and the burnt odor is gone.
When I make pancakes we always have leftovers so I
freeze them and when a recipe such as meatballs or
meatloaf calls for bread crumbs I substitute pancake
crumbs.
Instantly core a head of iceberg lettuce
by slamming it down on a cutting board.
Hold
cherry tomatoes between two plastic lids to slice them
all at once.
Coat your cheese grater with
nonstick spray for clean, easy shredding.
Peel
lots of boiled eggs at once by shaking them around in
the pot.

Chocolate Chip Cheesecake (Mug) Recipe
1/2 graham cracker, crushed 1 t. butter, melted
2 T powdered sugar 2 T. sour cream 3 T cream
cheese 1/4 t. vanilla extract 1/2 egg, beaten 1
T. mini chocolate chips
In small bowl combine
cracker and butter. Press into bottom of mug. In another
bowl, whisk together sugar, sour cream, cream cheese,
vanilla extract and egg until well combined. Stir in
chocolate chips. Pour into mug. Microwave hi for 1 min.
Open microwave door for 20 seconds, close, and microwave
for another min. or until set. Remove and let cool 10
min., then transfer to fridge about 2 hrs. Athena in DE

Tomato Bagel Sandwich For One Recipe
1 bagel, split and toasted 2 tablespoons cream
cheese 1 roma (plum) tomatoes, thinly sliced salt
and pepper to taste 4 leaves fresh basil
Spread cream cheese on bagel halves. Top cream cheese
with tomato slices. Sprinkle with salt and pepper. Top
with fresh basil leaves. Makes 1 serving. Lisa TX

Raspberry Upside-Down Cake Recipe
1/4 cup butter or margarine 1/4 cup sugar 1 1/2
cups raspberries 2 tablespoons sliced almonds 1
1/2 cups Original Bisquick® mix 1/2 cup sugar 1/2
cup milk or water 2 tablespoons vegetable oil 1/2
teaspoon vanilla 1/2 teaspoon almond extract 1 egg
Sweetened whipped cream or ice cream, if desired
Heat oven to 350ºF. Heat butter in round pan, 9x1 1/2
inches, or square pan, 8x8x2 inches, in oven until
melted. Sprinkle 1/4 cup sugar evenly over melted
butter. Arrange raspberries with open ends up over sugar
mixture; sprinkle with almonds. Beat remaining
ingredients except whipped cream in medium bowl on low
speed 30 seconds, scraping bowl constantly. Beat on
medium speed 4 minutes, scraping bowl occasionally. Pour
batter over raspberries. Bake 35 to 40 minutes or
until toothpick inserted in center comes out clean.
Immediately turn pan upside down onto heatproof serving
plate; leave pan over cake a few minutes. Remove pan.
Let cake stand at least 10 minutes before serving. Serve
warm with whipped cream. Mary J

Fresh Orange Refrigerator Cake Recipe
4 cups fresh orange juice 1 1/2 cups white sugar
3 (.25 ounce) packages unflavored gelatin 1/3 cup
lemon juice 1/8 teaspoon salt 1 cup heavy whipping
cream 1 cup diced orange segments 1 (12 ounce)
package ladyfingers 1 pint fresh strawberries
Line bottom and sides of an 8 inch springform pan with
split ladyfingers. Combine 1 cup orange juice and
sugar in saucepan; heat until sugar is dissolved. Remove
from heat. Soften gelatin in 1 cup orange juice then
stir in hot juice. Add remaining orange juice, lemon
juice and salt. Chill until slightly thickened. Whip
the cream until stiff and fold into the gelatin mixture.
Fold in orange sections and spoon into the prepared pan.
Chill for at least 4 hours. Remove sides of pan and
place on a serving plate. Garnish with fresh
strawberries. Makes 1 -8 inch springform pan Mary

Salad Recipe
2 cups fresh green
peas, uncooked 2 green peppers, chopped 2 carrots,
slivered 2 young cucumbers, thinly sliced ½ cup
minced parsley 2 tablespoons olive oil 1
tablespoon lemon juice Lettuce leaves
Place
the peas, green pepper, carrots, cucumbers, and parsley
in a bowl. Toss well with the olive oil and lemon juice
until the vegetables are well-coated. Serve on a bed of
lettuce leaves. Serve 4. Lisa TX

Peach, Apricot, and Strawberry Kabobs Recipe
4 Peaches 4 Apricots 18 Strawberries
2 oz. Melted Butter 2/3 cup Granulated Sugar
Vanilla Ice Cream (optional)
Preheat Grill or a
large saucepan (with low sides, or big enough for
skewers to fit inside). If you are using a grill, cover
it with a large sheet of aluminum foil. Cut the peaches
and apricots into slices. Place fruits, alternately,
onto six skewers. Coat each skewer with melted butter
and the roll in granulated sugar. Place on grill or in
saucepan and let cook for five minutes on each side.
Serve warm, and if you want, with ice cream.

Strawberry Bavarian Cream Pie Recipe
Crust 1 1/2 oz. Rice Krispies 4 tbsp. peanut
butter 1 tbsp. honey
Microwave peanut butter
and honey to soften. Add Rice Krispies and mix well.
Press into a 9 inch pie pan
Filling 2 c.
sliced strawberries 1 pkg. sugar free vanilla pudding
(small package) 2 c. skim milk
Spread
strawberries over crust. Mix pudding according to the
directions, using skim milk. Pour over the strawberries.
Chill and enjoy. Jenna

Chicken Spaghetti Recipe
6 cooked
chicken breasts 4 stalks celery, chopped 1 (12
oz.) pkg. spaghetti, broken into 2 inch pieces 2
cans cream of mushroom soup 2 oz. jar diced pimento
4 tsp. parsley 1/2 tsp. accent 1 green pepper,
chopped 1 1/2 c. chicken broth 1 lb. grated
Velveeta 3/4 c. white cooking wine 2 tbsp. Italian
seasoning 1/2 c. buttered bread crumbs
Cook
chicken and cut into bite-sized pieces. Cook spaghetti.
Cook pepper and celery in chicken broth until tender. (I
also add some onion and mushrooms.) Combine all
ingredients except bread crumbs and pour into a buttered
9 x 13 inch baking dish. Top with bread crumbs. Bake at
350 degrees for 30 minutes. Can be made the day before
and refrigerated. Mary Ann

Mary's Chicken Spaghetti Recipe
Chocolate Cherry Cake Recipe
A heavy
cake that needs no topping and stays moist for days.
2 cups Plain flour, sifted 3/4 cup sugar 3/4
cup vegetable oil 2 eggs unbeaten 2 tsps vanilla
1 tsp baking soda 1 tsp cinnamon 1/8 tsp salt 2
425g (13.5 ozs) cans pitted cherries, drained and
lightly mashed 185g (6.5 ozs) dark chocolate morsels
1 cup chopped nuts
Preheat oven to 175ºC (350ºF).
Combine flour, sugar, oil, eggs, vanilla, soda,
cinnamon, salt in large bowl. Mix well. Stir in
Cherries, choc morsels and nuts. Pour into greased and
floured 10 cup bundt pan. Bake at 175ºC for 50 to 60
minutes or until done. Cool 10 minutes. Remove from pan
and sprinkle with powdered sugar. Bob in Adelaide

Chocolate Cherry Cake Recipe

Colada Squares Recipe
2 cups vanilla
wafer crumbs 1/3 cup butter or margarine, melted 1
(8-ounce) can cream of coconut 2 (8-ounce) packages
cream cheese, softened 1 teaspoons rum flavoring 1
(8-ounce)) can crushed pineapple, drained 1/2 cup
maraschino cherries, chopped 1/2 cup chopped nuts
1 (8-ounce) container non-dairy whipped topping, thawed
1 cup flaked coconut, toasted*
Combine crumbs and
butter, press into bottom of 13 x 9 x 2-inch baking pan.
Set aside.
Gradually add cream of coconut to
cream cheese, mixing at medium speed on electric mixer
until blended. Stir in rum flavoring, pineapple,
cherries and nuts. Fold in whipped topping. Spread over
crust. Sprinkle with toasted coconut. Chill several
hours or overnight. Cut in squares. Makes 24 bars.
