5 T.
flour 4 T brown sugar 2 t unsweetened cocoa powder
1/4 t baking soda 4 t. whole milk 2 t. canola oil
1/2 t. white vinegar 1/4 t. mint extract Powdered
sugar 1 sprig of mint
In large mug, mix flour,
brown sugar, cocoa & baking soda. Add milk, oil, vinegar
& mint extract. Place on Hi for 2 min. Remove & top with
powdered sugar & sprig of mint. Athena in DE

Steamed Fish in Foil Packets Recipe
6 (6 ounce) fillets halibut 3 teaspoons dried dill
weed 3 teaspoons onion powder 1/4 teaspoon paprika
seasoning salt to taste 1 pinch lemon pepper 2
teaspoons dried parsley 1 pinch garlic powder 2
tablespoons lemon juice
Preheat oven to 375
degrees F (190 degrees C). Cut 6 foil squares, large
enough for the size of each fillet. Center fillets on
the foil squares and sprinkle each with dill weed, onion
powder, paprika, seasoned salt, lemon pepper, parsley
and garlic powder. Sprinkle lemon juice over each
fillet. Fold foil over fillets to make a pocket. Pleat
seams to securely enclose. Place packets on a baking
sheet and bake in the preheat oven for 30 minutes.

Salmon Recipe
4 (6 ounce) fillets
salmon 2 tablespoons olive oil 2 tablespoons
capers 1/8 teaspoon salt 1/8 teaspoon ground black
pepper 4 slices lemon
Preheat a large heavy
skillet over medium heat for 3 minutes. Coat salmon
with olive oil. Place in skillet, and increase heat to
high. Cook for 3 minutes. Sprinkle with capers, and salt
and pepper. Turn salmon over, and cook for 5 minutes, or
until browned. Salmon is done when it flakes easily with
a fork. Transfer salmon to individual plates, and
garnish with lemon slices. Makes 4 servings Mary

Chops with Cider Sauce Recipe

thick pork loin chops 1 small onion, finely chopped
6 sage leaves, chopped or 1 tsp dried sage
2Tablespoons butter, softened 1 cup cider 1 can
Campbell’s Condensed Celery Soup 1 tbsp freshly
chopped parsley Salt and freshly ground black pepper
1. Score the surface of the chops lightly on both
sides, making a criss - cross pattern. 2. Mix the
onion with the sage then mix in the butter. 3. Heat a
large frying pan, add the chops and fry them over a
medium heat for 2 minutes then turn them and spread the
onion and sage butter on top. Cook, covered, another 4
minutes. 4. Pour in the cider, round the edge of the
pan, cover and cook for 5 minutes until the chops are
ender. 5. Put the meat on warmed plates. Bring the
pan juices to the boil, add the soup, whisking well
while bringing it to the boil, to make a smooth sauce.
Add the parsley and season if necessary. Serve with
sautéed potatoes and green vegetables. Makes 4

Fried Rice for Two Recipe
1/4 cup
chopped onion 1/4 cup chopped carrot 1/4 cup
chopped green pepper 1/3 cup diced ham or pork 2
eggs 2 cups cooked rice (left over rice is the best)
1/2 tsp garlic salt 1 tsp chicken bouillon 2 tbsp
soy sauce 2 tsp vegetable oil
Put a wok or a
pan on high heat. Add oil to the pan. Whisk the eggs in
a small bowl. Put the eggs in the heated pan and
scramble very quickly. Remove from the heat and place
the scrambled eggs from the pan into a dish. Put the pan
on high heat and add more oil. Saute vegetables and ham
until soft. Add garlic salt and chicken bouillon. Add
rice and stir well. Add the scrambled egg that was
cooked earlier to the rice mixture and mix together.
Turn the heat down to low, add soy sauce and stir
quickly and serve. Serves 2 Linda

Stir Fried Rice for Two Recipe

1 tablespoon of oil 2
boneless, skinless chicken breast halves, cut into thin
bite-size strips 1 garlic clove; minced 1/4
tsp. ginger 1/2 c. water 2 tablespoons of soy
sauce; I use the low salt kind 1 (10 1/2 oz) can
condensed chicken broth 4 oz. uncooked angel hair
pasta, broken into thirds 1 (1 lb. pkg) Green Giant
Select Frozen Broccoli, Carrots, and water chesnuts
Heat oil in a large skillet over medium-high heat
until hot. Add chicken and garlic; cook and stir 4 to 5
minutes or until chicken is no longer pink. Add
ginger, water, soy sauce, and broth. Bring to a boil.
Stir in pasta. Add frozen vegetables; stir gently.
Return to a boil.Reduce heat to medium-low; cover and
simmer 5 to 8 minutes or until pasta and vegetables are
tender, stirring occasionally. Serves 4 Linda

Chicken Lo Mein Recipe
Italian Chicken Breasts for Two Recipe
2 chicken breasts olive oil 1 small can
mushrooms 1 teapoon italian seasoning pepper
1/2 cup diced tomatoes 4 oz mozarella cheese 1
Tblespoon parmesan cheese
Preheat oven to 375
degrees. Brush one side of chicken breasts with olive
oil and place oil side down in a baking dish. Top with
remaining ingredients except for cheese. Bake 20-30
minutes (depending on size of breast). Top with cheese
and bake an additional 5 -10 minutes. Serves 2

pound Sausage Links, sliced 12 large Eggs 1/2 cup
Onion, chopped 1/4 cup Green Bell Pepper, chopped
1/2 teaspoon Salt 1/4 teaspoon Black Pepper, freshly
ground 1/4 teaspoon Garlic Powder 1/2 cup Sharp
Cheddar Cheese, shredded
Brown sausage in a
skillet. Drain well and set aside. In a large mixing
bowl beat eggs and add remaining ingredients. Stir in
browned sausage. Spoon by 1/3 cup into greased muffin
cups. Bake at 350 degrees F for 20-25 min or until knife
inserted near center comes out clean. Makes 6

Scrambled Egg Muffins Recipe
Breakfast Burritos Recipe
2 strips
bacon, cut into 1/2 inch dice 1 handful frozen hash
browns or one small cooked potato, grated) 1 Tbsp
finely chopped onion 2 eggs, beaten 2 Tbsp cheese
whiz, or a slice of cheddar cheese cut into pieces
salt pepper to taste 2 flour tortillas, heated
Fry bacon in a small pan until all of the fat is
rendered, and the bacon is crisp. Remove from the pan,
and set aside. Drain off all but about 1 Tbsp. of the
bacon fat. Toss the potato and onion into the pan, and
cook, stirring occasionally, until the potatoes are
nicely browned. Pour the eggs over the potatoes, and
cook, stirring until nearly set. Toss in the cheese and
reserved bacon, and stir. Scoop into warm tortillas,
roll. I like adding a little mild salsa when making
my burritos. It adds a little more flavor. If I have any
mild green chiles I add them too. 2 servings.

Fried Chocolate Sugar Pie Recipe

c. all purpose flour 1 tsp. salt 1 c. shortening
1 egg, beaten 4 to 8 tbsp. water 1 tsp. vinegar
1 c. sugar 1/3 c. cocoa 1 tsp. butter Cooking
oil
Combine flour and salt; cut in shortening
until mixture resembles coarse cornmeal. Combine egg and
water; sprinkle over flour mixture. Add vinegar and
lightly stir until mixture forms a ball. Dough must hold
together but not be sticky. Wrap pastry in waxed paper;
chill at least 1 hour or until ready to use. Mix sugar
and cocoa for filling. Roll pastry as thin as possible
and cut into 5 inch circles. Moisten edges with water.
Fill with 2 tablespoons sugar and cocoa mixture and
place butter on top. Fold over top of pastry circle;
press together edges and seal with fork tines dipped in
flour. Seal must be secure to keep pie from opening
while cooking. Place four pies in basket of deep fat
fryer; lower into oil which has been preheated to 350
degrees. Cook until golden brown. Turning will not be
necessary if oil is deep enough. Drain well. Linda

3 ripe bananas 1/2
teaspoon salt 1 tablespoon sugar 1 teaspoon lemon
juice 1 tablespoon butter 6 slices dry toast
Mash bananas; mix them with salt, sugar, lemon juice,
and butter. Spread the mixture on toast, and place it
in a hot oven (425 deg F.) for about 5 minutes. Serve
hot with cream, if desired. Makes 6 slices Jenna

Strawberries, Sour Cream, and Brown Sugar Recipe
for One
1/2 c strawberries 2 T
brown sugar 2 T sour cream curly mint
For a
fast morning fruit plate, or for desert after a heavy
meal, nothing beats strawberries picked out of your
garden, sour cream and brown sugar. Rinse the
strawberries well. If large, hull and slice in half and
use a fork to eat. If not large, leave the green stem on
and dip and eat by hand instead of using a fork. Place
strawberries on a plate or in a sorbet cup along with a
couple of tablespoons of brown sugar and the same amount
of sour cream. Garnish with a piece of curly mint. When
eating dip the strawberries first into the sour cream
then the sugar. Makes 1 Serving Jenna

Honeydew Salad Wedges Recipe
1
honeydew melon 1 -3-oz. pkg. lemon flavor gelatin
1/2 cup boiling water 1/2 cup ice water ice cubes
1 cup whole strawberries, hulled
Cut melon in
half and scoop out seeds. Pat the inside of the melon
dry using paper towels and set aside. Dissolve
gelatin in boiling water. Stir until no sugar particles
are visible. Combine ice water and ice cubes to make one
cup. Add to gelatin and stir until slightly thickened.
Remove any unmelted ice.
Place each melon half in
a small bowl to hold straight and firm. Pace half of
strawberries in each melon half. Pour gelatin mixture
over berries. Cover with plastic wrap and chill until
firm, about 3 hours. To serve, cut into wedges.
