Right Duck and Scruffy
Today I dropped by the
park and to see the ducks. It has been so hot here I
haven't been over there in a few days. Right Duck and
Scruffy ran up to meet me when I got out of the car.
When the ducks are swimming together Right Duck quacks
and they go left. There is one duck I named Left Duck.
When Left Duck quacks they all turned around and went
the other direction. In the middle was Middle Duck and
Scruffy. When Middle Duck quacked they all stopped and
dipped their heads in the water. Scruffy was the duck
that all the other ducks picked on. When I first saw him
he had feathers missing, an injured left wing, and had
little or no feathers all up and down his neck. When
Right Duck said to attack Scruffy they all started
beating up on him. I would always feed Scruffy first and
Right Duck second. I made all the other ducks line up to
get their food. I did this for several weeks and Scruffy
was no longer beat up. The ducks knew that when Scruffy
got through eating then they would get their food too.
Scruffy is now a beautiful duck. Recently a 9-10 boy
came up to me at the park and asked why the ducks were
lined up and not attacking me as I feed them Cherrios. I
show them how I did it and he has continued to feed them
since.
When I was showing the boy how I knew who
the boss duck was he was interested. I explained to him that
if you got the boss duck on your side the rest will
follow his lead. I helped him understand that if feeding
Scruffy and then make the other ducks line up, the ducks
so
wouldn't try and attack him as he feed them. It took two
days and they ducks were a well behaved group of animals
and would wait their turn.

Scruffy
Since then the young boy started feeding
them, I gave his mother my phone number if he had a
question. Last Saturday he called because he was going
to be out of town and couldn't feed the ducks Cherrios
and asked if I could fill in for him. As I feed the
ducks it made me feel so good that a little boy would
worry about the ducks when he couldn't feed them. On
Saturday the ducks were happy to see me but you could
tell they were looking for the nice boy that usually
feeds them.
Today I took a picture of Right Duck
and Scruffy. As you can see Scruffy (the white duck) is
now a happy beautiful duck that has all his feathers and
is not beat up. Today Scruffy came up to the bench where
I was sitting and put his head on my knee. If ducks
could smile, I think he was. And to think that my
Master's Degree in Counseling really made a difference
in this duck's life, LOL.

Zucchini
and Tomatoes Recipe
2 T Oil 1 ea
med clove garlic, chopped fine 4 1/2 c thinly sliced
zucchini 14 -1/2 oz can tomatoes, chopped, drained
and reserve liquid 1 Env. Onion for Golden Onion Soup
Mix 1-1/4 t Basil Leaves
In large skillet,
heat oil and cook garlic with zucchini over medium-high
heat 3 minutes. Stir in tomatoes, then golden onion
recipe soup mix, thoroughly blended with reserved liquid
and basil. Bring to a boil, then simmer, stirring
occasionally, 10 minutes or until zucchini is tender and
sauce is slightly thickened.
NOTE: You can use
1/4 t garlic powder for clove of garlic.
Microwave Directions In 2-quart casserole, combine
zucchini with tomatoes. Stir in golden onion recipe soup
mix thoroughly blended with reserved liquid, garlic and
basil. Heat covered at HIGH (Full Power) 5 minutes,
stirring once. Remove cover and heat 4 minutes on HIGH
(Full Power) or until zucchini is tender, stirring once.
Let stand covered 2 minutes. Makes 4 Servings

Cheese Sticks Recipe
3 pound(s) ,
Any Hard Cheese 1 cup cornmeal 1 cup flour 1/2
teaspoon salt 1/4 teaspoon Tabasco sauce 1 large
egg beaten 1/2 cup cheese, grated Buttermilk, as
needed
Place cheese in freezer for one half hour.
Remove cheese and cut into 1" thick strips just before
cooking. Mix batter; add corn meal and flour, salt,
tabasco, egg and add buttermilk until at a consistency
slightly thinner than toothpaste. Dip cheese sticks
into batter (use toothpicks to handle them) carefully
place in a pan of hot oil making sure that oil covers
good, do not put in to many at once or they will stick
together. When browned evenly remove and immediately
roll in grated cheese. Susan

Wrap
mozzarella stick (string cheese) in egg roll wrapper and
deep fry. Serve with marinara sauce for dipping.

Strawberry Butter Recipe
1/2 cup
butter, softened 1 (8-oz.) pkg. cream cheese,
softened 1/4 cup honey 1/2 cup mashed strawberries
Combine all ingredients. Serve with muffins, bagels,
waffles, pancakes, or homemade bread. Store in a covered
container in the refrigerator. Makes 2 cups Linda

Recipe
2 cups water 1/2 cup quick
grits, uncooked (Quaker's or whatever kind you have
locally) 4 ounces processed cheese (Velveeta or your
favorite cheese) cubed Paprika garlic to taste
(optional) Could also add canned chopped mild green
chiles
Bring water to boil; stir in grits slowly,
reduce heat and simmer until thick (3 or 4 minutes).
Add cheese and garlic; cook until melted (about 3
minutes). Add peppers at this time also if you are
going to use them. Remove from heat and sprinkle with
paprika. Serves about 4 Lisa TX

Jambalaya Recipe
1 pound smoked sausage - sliced 1/2 pound ham -
diced 1 tablespoon oil 2 onions - chopped 1
green pepper - chopped 1/2 cup celery - chopped
1/2 cup green onions - chopped 1 can tomatoes (16 oz)
3 cups beef, chicken stock or water 2 cloves garlic -
chopped 1 bay leaf 1/4 teaspoon pepper 1/2
teaspoon salt 2 cups rice -uncooked 1 pound
shrimp, peeled and deveined
Heat oil in skillet.
Fry the sausage and ham. Add onion, green epper, green
onions and celery and sauté until tender or soft. Add
tomatoes, stock or water to pot. Add garlic, bay leaf,
pepper, salt and rice. Stir, bring to a boil - then
reduce heat. Cover and simmer for 15 minutes. Add water
if Jambalaya seems dry. Add shrimp, re-cover and cook 15
minutes longer. Mix well. (Serves 6-8). Oma in

Linda's Cajun Popcorn Recipe
1/2 cup
butter, melted 2 teaspoons paprika 2 teaspoons
lemon pepper seasoning 1 teaspoon salt 1 teaspoon
garlic powder 1 teaspoon onion powder 1/4 teaspoon
ground red pepper 20 cups popped popcorn
Preheat oven to 300 degrees F. In a small bowl, combine
butter, paprika, lemon pepper, salt, garlic powder,
onion powder and red pepper. Place popcorn in a large
baking pan; pour butter mixture over popcorn and stir
until well coated. Bake 15 minutes, stirring every 5
minutes. Remove from oven; cool completely. Store in

Lime
Chicken Picante Recipe
1/2 cup
chunky salsa 1/4 cup Dijon-style prepared mustard
2 tablespoons fresh lime juice 6 skinless, boneless
chicken breasts 2 tablespoons butter 6 tablespoons
plain yogurt 1 lime, sliced into segments
In a
shallow nonporous dish or bowl combine the salsa,
mustard and lime juice. Mix well. Add chicken, cover
dish and refrigerate. Marinate for at least 30 minutes.
Melt butter or margarine in a large skillet over medium
heat. Remove chicken from marinade and add to skillet.
Saute, turning frequently, until browned on all sides.
Meanwhile, boil remaining marinade in a saucepan for 4
to 5 minutes, to remove all possibility of bacteria.
Add boiled marinade to chicken and saute another 3 to 5
minutes or until chicken is 'fork tender' and marinade
is starting to glaze. Remove chicken to serving platter;
raise heat to high and boil marinade for 1 minute. Spoon
marinade over chicken and top each breast with 1
tablespoon yogurt and 1 lime wedge. Serve. Serves 6

Lime Chicken Picante Recipe
Chicken with Mushrooms for Two Recipe
14 oz. can mushrooms 2 chicken breasts 1/4 c.
lemon juice Dash each of paprika, garlic salt and
seasoned pepper
Spray bottom of casserole with
vegetable cooking spray. Add mushrooms. Place chicken
breasts on top; add lemon juice, paprika, garlic salt
and seasoned pepper. Cover. Bake at 375 degrees for 40
to 45 minutes or until chicken tests done. Yields 2
servings. Mary J

Hawaiian Recipe
3 whole chicken
breasts (about 1 lb. ea.), split 2 tablespoons butter
or margarine, melted 1 can (20 oz.) pineapple chunks
in natural juice, undrained 1/4 cup maraschino
cherries, halved (optional) 1 envelope Lipton Recipe
Secrets Onion Recipe Soup Mix
On heavy-duty foil
in shallow baking pan, arrange chicken brushed with
butter. Broil 10 minutes or until lightly browned on
both sides. Reduce oven to 350 degree. In medium
bowl, combine remaining ingredients pour over
chicken. Fold foil, sealing edges airtight with double
fold. Bake 45 minutes or until chicken is done.

Chicken Hawaiian Recipe
Orange Chicken for Two Recipe
2
boneless skinless chicken breasts Salt, pepper,
garlic powder 1 tbsp. orange juice 1 tbsp. water
1 c. sliced fresh mushrooms
Brown chicken breasts
in Teflon pans. Add salt, pepper, and garlic powder
to taste; add orange juice and water. Add sliced
mushrooms. Cover and turn heat to low or simmer for
20 minutes. Serves 2. Mary J
