I buy Tender Quick at the local grocery store. It is located with the salt and spices. I have to have it for my summer sausage to cure right. The sack is about the size of a 1 pound sack of sugar and the wrapping is dark blue like a regular box of Morton's salt.

This is for Linda in Patterson, NY. My friend and my nephew love this jelly.

This is sweet and hot at the same time; serve as a relish or jelly. Try it with crackers and cream cheese and with roast pork or turkey.

Hot Red Pepper Jelly

1-1/4 pounds red or green hot peppers
1-1/4 pounds sweet red peppers
2 teaspoons chili powder
Pinch cayenne pepper
2 cups cider vinegar
2 cups fresh lemon juice (about 6 lemons)
Grated rind of 6 lemons (grate rinds before juicing lemons)
2 teaspoons salt
10 cups granulated sugar
1 bottle liquid pectin

Seed hot and sweet peppers and coarsely chop. In food processor or blender, puree peppers, one-third at a time, with chili powder and cayenne pepper.

In large saucepan or preserving kettle, combine peppers with vinegar, lemon juice, rind and salt; bring to boil and boil rapidly for 10 minutes. Stir in sugar and boil for 5 minutes longer. Add pectin and boil for 1 minute; skim foam from surface. Ladle into hot sterilized jars leaving 1/8-inch headspace. Seal immediately, label and store in cool, dry, dark place.
Makes about 12 cups.

Dumplings recipe
2 Eggs (whip real good)
1/2 Cup ice cold water
Add enough (self rising) flour to make dough stiff. Roll out real thin, cut in small pieces ,drop in chicken broth ( I make these ahead of time and freeze them to use later)

PUMPKIN COOKIES
2 c. brown sugar
2 c. pumpkin
1 c. canola oil
2 tsp. vanilla
4 c. flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
1 t. cinnamon
1 t. nutmeg
1/2 tsp ginger
1 (12 o) pkg chocolate chips

Mix sugar, pumpkin, oil & vanilla. Add dry ingredients. Then chocolate chips. Bake on greased cookie sheet 12-15 minutes at 350*. Yield 7
dozen.

Our AZ grandsons say these are the best cookies they ever ate. In fact I just sent them a "care package" last week with these cookies in it.

Thanks for the recipe booklet of chicken recipes--many look wonderful. I am looking for a recipe I had several years ago. The individual pieces of chicken were 1st dipped in a pancake-like batter that also contained poultry seasoning then rolled in a mixture of rice Krispie crumbs and seasonings. The chicken was baked in the oven. I'm hoping one of your readers has the recipe.

This is a recipe from a restaurant in Cedar Key Fla. known for its Heart of Palm salad. I always order it, when I go there.

Swamp Cabbage Salad (Heart of Palm)
Be sure all ingredients are cold.
Jumble in a large bowl
Shredded Lettuce
Pineapple chunks
Peach or Apricot chunks
chopped dates

Dressing
1 quart mayonnaise
1/4 cup peanut butter
3 ounces pineapple juice
2 drops green food coloring

Mix a little mayonnaise in the peanut butter
Add the rest of the mayonnaise and the other ingredients. Mix well. Keep refrigerated until used. Use as much as you like in a salad.

Another version:
Heart of Palm drained
2 cans crushed pineapple
2 Tbsp sugar
2 Tbsp. vinegar
1 Pkg miniature marshmallows
cinnamon
Mayonnaise
Mix vinegar and sugar in a bowl; add marshmallows and stir to soak up the liquid. Slice the heart of palm very thin, add the drained pineapple. Combine with all ingredients, using enough mayonnaise to moisten. Sprinkle generously with cinnamon. Serve on a bed of lettuce.

Macaroni and Cheese
This was my Mothers recipe but I added to it.
In the Milk I put about a tablespoon of Worcestershire sauce. I also add about 1/2 of an Onion chopped. The onion I put in layers as you do the cheese. Just some spice.

Growing up my Mom was a wonderful cook and often baked pies to serve and give away. My favorite desert was made with pie crust, in later years she made the crust for this which I call

Apple Sauce Torte
Pastry for 2 pies [4 crust]
Sweetened apple sauce
Butter & sugar
metal cake pans

Turn cake pans up side down butter or grease bottoms, Then place thinly rolled pie crust over over the bottoms brush with milk and sprinkle with sugar. Let edges of crust pan slightly over pan sides so when removed they form a little" dish". Bake in oven [ 375 or 400 ] until brown the tops some times will be a little bubbly Remove from oven and lightly butter. Let cool then remove carefully from pans so as not to break crust, even though it can be pieced together.

Mom used a large pressed glass platter to serve this,, put a small amt of apple sauce in the middle and place first crust on it with edges turned up to make a shallow bowl effect the dab of apple sauce keeps crust from slipping, fill 'bowl' with apple sauce and repeat layers I like each layer sprinkled with some nutmeg.

This is good served when crust is crisp but I loved it when the crust had become soft, if ever any was left we ate it the next day.

Mom also rolled dough thin and brushed with milk sprinkled with cinnamon sugar, cut into 'cookies baked in hot oven on a cookie sheet, these were very good and crispy
Hope some one will enjoy this as much as I have, it has even been my Birthday Cake request. My only regret is mine has never been as good as my Moms.

Burger King?s Hershey Sundae Pie Clone

1 chocolate pie crust (store bought or Hershey crumb recipe)

Layer 2:
8 ounces cream cheese
3/4 cup powdered sugar
8 ounces Cool-Whip
1 teaspoon vanilla extract

Layer 3:
1 large box chocolate pudding
Milk

Whip cheese until softened. Blend in powdered sugar and remaining ingredients and place on crust. Make pudding as directed, but minus 1/2 cup milk. Top pie with pudding mixture. Finish with Cool Whip and chocolate curls.

Hi Nancy,
I make Jar Cakes every Christmas. You have to use wide mouth pint jars and grease them well. Fill 2/3 full with cake batter and bake in the oven. Seal when done. When ready to eat, turn the jar upside down and the cake slides right out. Slice and heat in microwave. Top with whipped cream. These are especially good for our senior citizens.

This recipe is for Angie in Texas. I do this the easy way so I am sending the recipe like I make it.

Chicken and Dumplings
Cook chicken and remove bones. I do this the day before I am having the meal. Save broth. You may need to use some canned broth to make enough broth. There is no way I can tell you how much broth you need. If you cook the entire recipe of dumplings at one time, you will need a large can of chicken broth along with the broth from the chicken. My family only likes white meat chicken so I only cook the breast. I do not have a lot of broth so I have to use the canned broth with it.

Up to a week before I make the dumplings.
4 cups flour
1/4 cup shortening (Crisco solid)
1 egg
Milk.

Put flour in a large mixing bowl. Cut in the shortening. Put egg in a 1 cup measuring cup and finish filling the cup with milk.

Pour into flour mixture. Stir until milk is blend with flour and holds together. You may need to add a little more milk.

Divide the dough into four pieces. Roll out one piece as thin as possible. You will need to add extra flour to your surface you are rolling the dough on. Flip this piece onto waxed paper. Using pizza cutter, cut the dough into 1 inch or so squares. Pick up the waxed paper and lay on a jelly roll pan. Do this three more times. Seal pan with foil and freeze. After they are frozen you can then put each layer in a quart freezer bag.

Sometimes the dough is larger than the waxed paper, then I cut off the part that is off the paper and put it onto another piece of waxed paper.

On the day you are cooking the dumplings, bring the chicken and broth to a boil. Add the dumplings, stirring after each addition of dumplings. Cook for ten to fifteen minutes with lid off on medium heat.

My mother taught me to add a little yellow food coloring to the broth as that makes the dumpling more eye appealing.

If your broth is still runny when the dumplings are cooked, mix about a 3/4 cup of water and 1/4 cup of flour and add to the pot, stirring while adding the thickening.

Oyster Stuffing
4 cups dry bread cubes
3 Tbsp. chopped onion, if desired
1 tsp salt
1/4 tsp. pepper
sage to taste
1/4 tsp. poultry seasoning, if desired
1/2 pint drained, chopped oysters
1/3 cup melted butter
Hot water or stock to moisten

Combine bread, onion, seasonings, and oysters (raw or heated in the butter); add butter and sufficient liquid to moisten. Toss gently to mix. Allow 1 cup stuffing for each pound of poultry.

Oyster Stuffing
1/2 cup chopped celery
1/2 cup chopped onion
1/4 cup butter
6 cups dry bread crumbs
1 Tbsp. chopped parsley
3 cups chopped oysters, (save liquid)
1 bay leaf
salt and pepper
1 tsp. poultry seasoning
2 beaten eggs
1-3/4 cups milk and oyster liquid

Cook celery and onion in butter until soft, but not brown. Add crumbs and parsley; mix thoroughly. Add oysters, bay leaf, seasonings, and eggs. Add enough liquid to moisten. Stuffing for 10 to 12 pound turkey.

Oyster Stuffing

1 cup onion, chopped
1/2 cup celery, chopped
1/4 cup margarine
1 pint oysters, fresh or canned, drained
1 tablespoon dried parsley
1 package (8 ounces) herb-seasoned stuffing cubes
1/2 cup hot water
1/2 cup light cream or evaporated milk

In a 3-quart saucepan, saut?onions and celery in margarine until soft. Stir in oysters, parsley, stuffing cubes, water and cream and mix thoroughly. Stuff in turkey or chicken cavity and roast according to your usual method. Or place in greased 2-quart casserole and bake, covered, at 350 degrees for 30 minutes.

I find tenderquik in the spice section of our grocery. You might check with the butcher in the meat section, also, as some grocery stores sell it there. Good luck with the jerky. It is the greatest but spicy!!

Martha Washington Candy
2 (1-pound) boxes powdered sugar
1 cup butter, softened
1 (14-ounce) can sweetened condensed milk
2 cups flaked coconut
2 cups finely chopped pecans
1/2 block paraffin wax
1 (12-ounce) package semisweet chocolate chips
Combine powdered sugar, butter, sweetened condensed milk, coconut and pecans together, mixing well. Roll into 1-inch balls and place on a waxed paper lined baking sheet. Chill.
Melt chocolate chips and paraffin in double boiler. Using a wooden pick, dip candy balls into chocolate mixture and place on prepared baking sheet. Chill until chocolate is firm.
Makes about 4 dozen candies.

Cook's Note: Try toasting the coconut for additional crunch and scrumptious flavor!

Chicken & Dumplings
To Make Dry Mix:
5 lb. self rising flour
1 lb. baker's shortening

For 1 batch of dumplings:
1-1/2 cups of dry mix
4 fl. oz. buttermilk
3/4 qt. chicken stock
1/2 oz oleo
Chicken tenders, poached
Directions:
Using a dough hook, cut shortening into flour until well mixed. Combine 1-1/2 cups of the dry mix (Save the rest of dry mix for future use) with 4 oz. buttermilk.

Mix well until dough forms. Roll 1/4 inch thick on a floured surface. Cut with pastry wheel into one inch squares. Bring chicken stock and oleo to a boil. Add dumplings, simmer for 20-30 minutes or until dumplings are done and broth has thickened. Serve with poached chicken tenders.

To get rid of mothball odor or another kind of strong odor, I always use full strength plain vinegar. Just empty a small bottle of plain vinegar in a bowl and let stand full strength for 24 hours in a tightly closed area. The smell disappears and it works every time.

Honey Bees
1/3 cup nonfat dry milk
1 Tbsp. honey
1/2 cup peanut butter
Sliced almonds
2 Tbsp. wheat germ

Shape with teaspoon. Place 2 slices of almonds for their wings. Take a toothpick rolled in cocoa. Make 2 dark stripes on each bee. Good "pick-u-up"
About 50 calories.

Honey Cookies (Sand Tarts)
1 cup shortening (oleo)
1/4 tsp. salt
1/4 cup honey
2 tsp. vanilla
2 cups flour
2 cups pecans
powdered sugar

Cream shortening; add honey, salt, flour, and vanilla. Mix well and add nuts. Bake 40 to 45 minutes at 300?. Roll in powdered sugar. (You can make them round or oval; shape them in balls of some type and place on cookie sheet.)

(From Better Homes and Gardens Cook Book, 1951)
Lebkuchen (Honey Cakes)
2 eggs
1 cup sugar
1/3 cup strained honey
3/4 cup unblanched almonds
2-1/2 cups flour
1/4 tsp. soda
1/2 tsp. cinnamon
1/4 tsp. allspice
1/2 tsp. cloves
6 Tbsp. chopped candied orange peel
2 Tbsp. chopped candied lemon peel

Beat eggs and sugar until fluffy. Add honey and mix well. Add slivered almonds. Add sifted dry ingredients, then candied fruit peels. Mix well. Chill thoroughly. Roll 3/8 inch thick on floured surface; cut with round cookie cutter. Bake on greased cookie sheet in moderate oven (350?) 20 minutes. Makes 3 dozen cookies.

Nougat
1 cup sugar
1/3 cup light corn syrup
1/3 cup strained honey
1/4 cup water
1/4 tsp. salt
2 egg whites
1/4 tsp. vanilla
1 cup chopped walnuts

Combine sugar, corn syrup, honey, and water. Cook, stirring only until sugar dissolves, to very-hard-ball stage (260?). Add salt to egg whites; beat stiff. Slowly pour syrup over egg whites, beating constantly with beater or slotted spoon. Add vanilla. Beat until thick. Add nuts. Drop from teaspoon onto greased pan or spread greased 8-inch square pan. Cool and cut in rectangular pieces. If desired, dip pieces into melted dipping chocolate. Makes 24 pieces.

Honey Nougat
2 cups sugar
1/2 cup honey
1/4 cup water
1/8 tsp. salt
2 stiff-beaten egg whites
pecans

Combine sugar, honey, and water. Cook to very-hard-ball stage (260?). Combine salt and egg whites; beat stiff; add syrup gradually. beating constantly until it stands in stiff peaks. Spread in greased shallow pan. Top with nuts. Cool and cut in rectangular pieces. Or when cool enough to handle, pull off small pieces; form into balls; roll in chopped nuts. Makes 2 dozen pieces.

Spiced Sugared Walnuts
1-1/2 cups sugar
1/4 cup honey
1/2 cup water
1/2 tsp. vanilla
2 cups walnut halves

Cook to 246? (firm-ball stage), sugar, honey, and water. Add vanilla; stir until creamy; add nuts; spread on waxed paper to harden; break into about 2 dozen pieces. Vary flavor with grated orange peel or 1/2 tsp. cinnamon 


For Angie in Texas who wanted the Chicken and Dumplings Recipe without using Baking Power.

Southern Style Chicken and Dumplings
Makes 4 to 6 servings

1 (3 pound) whole chicken
1 onion, quartered
2 slices lemon
salt and pepper to taste
3 cups water
1 bay leaf
1/2 teaspoon dried thyme
2 cups all-purpose flour
3 tablespoons shortening
1 teaspoon salt
1/4 cup water

In a heavy pot with a lid place the chicken, onion, lemon, salt, pepper, water, bay leaf and thyme. Simmer all over low heat until tender, about 1 hour.

Let chicken cool slightly in pot, then remove and take the meat off of the bones. Discard the bones and skin and skim excess fat off the broth if desired. Discard the onion, lemon and bay leaf. If desired, wash out pot well. Return broth and chicken pieces to the pot. Simmer over low heat while making the dumplings.

To Make Dumplings:

In a medium mixing bowl, cut shortening into the flour and salt. Stir in 1/4 cup water (more if needed) to form a soft dough. Roll out dough on a floured surface, with a rolling pin, until very thin. Cut into 1 inch wide strips using a pizza cutter or knife. Tear off 1 inch long pieces from these strips and drop into simmering broth and chicken meat. Simmer for 10 minutes with the lid off, then 10 minutes more with the lid on. Serve immediately. You will go back for more it is so delicious.

Applesauce cake baked in a jar
Greased the jars so the cake will slide out easily. Store as you would regular canned goods. Look at the seal before opening and make sure it is OK.

Pumpkin Pecan Cake
1 box Duncan Hines Spice Cake Mix
1 16 oz. can Libby's Pumpkin
1/4 cup butter or margarine (softened)
4 eggs

Filling/topping:
2/3 cup butter or margarine
1 3 oz. cream cheese
3 cups powdered sugar
2 teaspoons vanilla
1/4 lb. caramels

Crust:
2 cups crushed vanilla wafers (about 50)
1 cup chopped pecans
3/4 cup butter or margarine

In mixing bowl beat, vanilla wafers, pecans and butter until crumbly. Press into 3 greased and floured 9 inch cake pans.In another mixing bowl beat, cake mix, pumpkin, butter and eggs for 3 minutes. spread evenly over crust in each pan. Bake for 30 minutes (according to box directions) or until toothpick comes out clean. Remove from oven and cool completely. Mix together the filling/topping ingredients, frost between layers, sides and top. Drizzle with caramel and decorate with whole pecans.

This is for Bobbie in Chicago who requested a recipe for Hamburger Stew. This is my Grandma's recipe -- she used to call it their "Depression Dinner". It's very simple and I still classify it as one of my comfort food recipes.

Hamburger Stew
1-2 lbs Ground Beef
1 Medium Onion -- chopped
2-3 Medium Potatoes -- peeled and cut into bite size chunks
salt and pepper to taste

Brown the Ground Beef and Onion in large saucepan. Drain and then add potatoes. Add water -- enough to cover beef and potatoes. Simmer until potatoes are tender. Thicken the broth with a cornstarch and water mixture. I add a little bit of Kitchen Bouquet browning sauce to the gravy. You can add carrots, green beans, green pepper, peas, celery or any other vegetable to this stew but I just like the plain old hamburger and potatoes -- served over a piece of bread.

I have a recipe that is similar the one submitted that serve 4 to 6 people.

Bread Pudding

3-4 tbsps softened butter
8-10 thin slices homemade type white bread
1/2 cup raisins
1/4 white sugar
2 1/2 cups milk
2 eggs
1/4 tsp salt
vanilla to taste

cinnamon sugar
icing sugar (to dust before serving)

Butter all the pieces of bread. Now cut bread into either triangles or cubes. Place bread into a baking dish that should hold about 6 cups. Next sprinkle the bread with the raisins and finally the cinnamon sugar.

Whisk in a separate bowl the eggs, sugar and salt. Next add milk and whisk again. Pour mixture over bread and let stand at least a half-hour so that the bread can absorb the mixture. Preheat oven to 350. Place dish into the center of the oven and bake for about 1 hour. A knife inserted into the pudding will come out clean when the pudding is done.

Cinnamon Sugar
1 tbsp cinnamon to 4 tbsps sugar (mix together)

Vanilla Sauce
2 cups whipping cream
3 egg yolks
8 tbsps sugar
vanilla to taste

In a pot bring to boil. Remove from stove. In a bowl combine egg yolks. sugar, and vanilla. Add some of the cream to the egg mixture and mix. Return this mixture to the pot and cook for a few moments. Once everything is in the pot, do not let the cream come to a boil or you'll end up cooking the eggs (a curdled look). The sauce should be thick enough to coat the back of a wooden spoon.

Ranch Style Hamburger Casserole
1 pound hamburger
1 can corn
1 can Ranch style beans
1 can biscuits
Longhorn Cheese

Brown meat, add corn and beans. Pour in baking dish. Cover with grated cheese. Cut biscuits in half. Lay these on top of the
casserole. Bake in 400 degree oven until casserole is hot and
biscuits are brown.

Nancy, Thank you so much for the chicken recipes. I haven't had a chance to go through all of them, but know I will be able to use several. My grandsons live with me and like chicken, so the more ways I can fix it, the better. Yours is my favorite site and I look at several, but get more useful info from yours. Here are a couple of recipes that I use a lot and really like.

The following recipe was given to me by my mother-in-law.

Squash Dressing
1 bell pepper, chopped
2 stalks of celery, chopped
1 onion, chopped
1 stick butter or oleo
1 Jiffy cornbread mix, cooked per
directions on box
5 yellow squash, cooked
1 can cream of chicken soup
sage to taste
salt and pepper to taste

Mix all ingredients together. Bake at 350 for 30-45 minutes.
The next recipe is a very simple recipe for cookies for diabetics.

Diabetic Cookies
1 box One-step Angel Food cake mix
5-6 oz. diet cream soda

Mix these two ingredients together. Drop by tsp. onto oiled cookie sheet. Dough will spread as it bakes. If it spreads too much, reduce amount of soda you add. Bake about 10 min. or until cookie is golden brown. May add dried fruit bits or chopped nuts. Very good.

Hi Nancy,
Hoping you can solve this problem. I canned a dozen jars of hot and sweet peppers (mixed together). Every jar made the "pop" sound and the lids sealed. A week later I went to get a jar and each one had broke it's seal. What would cause this to happen? Sure hope you can help 'cause I don't want to repeat this mistake.

Reply about cake/bread in a jar. If they aren't safe to eat there are lots of guys in Iraq that are in a heap of trouble. I know a couple of ladies that send their husbands cakes in a jar, banana nut bread in a jar, etc and as far as I know they are all still healthy. In fact one came home for a visit this week and doesn't look as if they have bothered him any. Why wouldn't they be good if you kept your equipment clean and followed the instructions for canning?

Ambrosia Pound Cake
1-1/2 sticks sweet butter, softened
3/4 cup Crisco
1-1/2 cups sugar
5 eggs
2 tsp. coconut extract
3 cups all purpose flour
1/2 tsp. baking soda

1 cup freshly squeezed orange juice
1 cup coconut

Grease and flour tube pan or bundt pan.
In large mixing bowl, combine butter, Crisco and sugar. Beat until well blended. Add eggs one at a time, beating well after each addition. Add coconut extract and mix well In medium bowl, combine flour, baking soda and salt. Stir to mix. Add to batter alternately with orange juice. Stir in the coconut Pour into pan. Place pan in COLD OVEN. Set at 325?.
Bake for one hour and 30 minutes. Turn cake out of pan immediately

I'm looking for some good recipes for stuffed green peppers. I picked the last of my peppers today and would like to use some this week. Also if anyone has an idea how to make stuffed peppers with little to no rice I'd like to make some for my husband who is on the Adkins diet and has lost over 100 pounds. Thanks, Bobbie/Chicago
