In the 8/16 newsletter Marti in AL was wanting a tomato basil soup
recipe. I have used this a few times and it is good but I am not to eat tomatoes
because of the acid in it that cause me stomach problems. I still have it and
raw tomatoes because I like tomatoes yes I have to pay for it in a big way. This
problem I have had for a while and it is not from the soup.
Tomato Basil Soup
1 large mild onion, chopped I use 1 medium onion and 2 shallots we prefer it
this way
1/4 cup butter
1-1/2 lbs. ripe tomatoes, or 28 oz. can diced tomatoes
2-1/2 cups chicken broth from the carton
3 tablespoons fresh basil, chopped take basil of the stem by stripping the basil
from the stem
Saut?the onion and shallots in butter until soft. Add tomatoes and continue
cooking for another minute. Pour in the chicken broth. Bring to a boil then
simmer for 20 minutes. Puree the mixture in a blender, then add basil. Return to
the heat until warmed.
