This is for Betty T from Georgia who wanted to get sticky glue off her hands. I would have tried WD40. It takes everything off. I even use it on my car when I accidently run over chewing gum. Wipes right off. I use it to get every kind of residue off of everything.

Sue R asks what kind of liquor to use for vanilla. My original recipe called for brandy.I tried that and didn't like it. Now I always use vodka and buy the cheapest liter bottle I can find. But I cure mine for at least 3 months and don't remove the beans. I just pour the vanilla into a smaller bottle for use in the kitchen.

Freezer Pickles

4 pounds pickling cucumbers, thinly sliced
2 large onions, thinly sliced
1/4 cup salt
3/4 cup water
4 cups sugar
2 cups cider vinegar

Combine cucumbers, onions, salt and water in one very large bowl. Let stand at room temperature for 2 hours. Mix sugar and vinegar and stir until sugar dissolves. Pour onto cucumber mixture. Pack into freezer containers, leaving room for expansion. Cover and freeze. Thaw at room temp for 4 hours before serving, or in refrigerator. These are ready to eat the following day. This makes 8 to 10 pints.

These are the most incredible sweet pickles and great to put on burgers or sandwiches.

Here is the Chicken Cacciatore recipe from Tyler Florence that Fran in Upstate NY was looking for.
Trish in Illinois~

Chicken Cacciatore
Tyler Florence

6 red bell peppers
Extra-virgin olive oil
Sea salt and freshly ground black pepper
1 1/2 cups all-purpose flour
2 Tbs garlic powder
1 Tbs dried oregano
1 egg
2 cups milk
3 1/2 lb whole chicken, cut into 8 pieces
6 garlic cloves, halved lengthwise
1 onion, sliced thin
2 ripe tomatoes, coarsely chopped
1/2 lemon, sliced in paper-thin circles
3 anchovy fillets
1 Tbs capers
1 tsp red pepper flakes
1/2 bunch fresh basil, hand-torn (1/4 bunch to flavor the base, 1/4 bunch to finish the dish)
1 cup dry white wine

Start by preparing the peppers because they will take the longest. Preheat the broiler. Pull out the cores of the red peppers; then halve them lengthwise and remove the ribs and seeds. Toss the peppers with a little olive oil, salt, and pepper. Place them on a cookie sheet, skin side up, and broil for 10 minutes, until really charred and blistered. Put the peppers into a bowl, cover with plastic wrap, and steam for about 10 minutes to loosen the skins. Peel the peppers and roughly chop into chunks; set aside.
Season the flour with the garlic powder, dried oregano, and a fair amount of salt and pepper. Whisk the egg and milk together in a shallow bowl. Dredge the chicken pieces in the flour and tap off the excess. Dip each piece in the egg wash to coat and then dredge with the flour again. Place a Dutch oven over medium heat and pour in about 1/4-inch of oil. Pan-fry the chicken in batches, skin side down, until crisp, about 8 minutes. Turn the chicken over and brown the other side about 10 minutes longer. Remove the chicken to a side plate, pour out the oil, and clean out the pot.

Put the pot back on the stove and coat with 1/4 cup of oil. Add the garlic, onion, tomatoes, lemon slices, anchovies, capers, red pepper flakes, half the roasted red peppers, and half the basil. Season with salt and pepper. This part of the recipe is going to be your base. What we are looking for is a fragrant vegetable pulp, so simmer for about 20 minutes, stirring often, until everything breaks down.

Add the remaining roasted peppers and the remaining basil. Tuck the chicken into the stewed peppers and pour in the wine. Turn the heat down to low, cover, and simmer for 20 minutes, until the chicken is cooked.

For Betty T. Ga. who does the Faberge eggs, I would suggest you might call the manufacturer of the glue you use to see what they recommend you remove it with. They would need to have that info on hand, I would think.

Hi Nancy and Landers!!!
Hope your getting comfy in your new digs!

Amy B in Tn. said she's been reading Galloping Gourmet, by Graham Kerr.....my mom loved him!

Anyhoooo, she asked about the containers referred to as Eierkocher. I believe these are also called a egg coddler -to make coddled eggs.

Ive seen them occasionally on some of the online auctions. Some are called Worchester or Westminster Egg Coddlers or Worchestor or Westminster Egg Coddler Cups.Im sure there are also other names for them.

It was interesting to read how to use the cups as I've said I've seen them on some of the online auctions occasionally, and knew you put the egg in the cup and submerged it in the hot water, but often wondered how you really use them.
Thanks for posting the directions on how to use them!

Good luck and I hope you get lots of responses!

Have a GREAT day everyone!!!

To Joann in SC Re: Roomba Vacuum cleaners.
I've had one for several years. In fact I just purchased the Roomba 500 series when my Roomba 400 series needed a new Battery. (The batteries are quite expensive.) Of course the Roomba is expensive, but the best buys I have always found on HSN, wait for a special they have several. Be very careful some sold on the open market in stores are refurbished or older models. The Roomba 500 series I find to be so much better than even the 400 series, and I have Loved them all. They do a GREAT job cleaning, just get your cords out of the way, and pick up little things. Be very careful and diligent with your cleaning of the Roomba and keep it charged. You will love it and to have under beds get dust and dirt up makes me feel much healthier. I still use a regular Vacuum in my Living room and dining room, but I only use the Roomba in my Bedrooms.
I'm always behind reading my newsletters, so I hope this was not too late.
Thank You Nancy for all your hard work.
Joie in TN

To Lori R. about Oreo Lollipops. When using regular oreo's, place some on a paper plate in one layer and zap them in the microwave for a few seconds. Softens the cream and makes it easy to insert the sticks without breaking the cookie. I do this every year around Christmas and never have complaints about a soggy cookie.

From Lindah Texas ,To the lady who wanted IRISH recipes, I have a friend who lives in Ireland and her hubbie is Irish, I asked her to help you out, this is what she sent me for you.
Here are some you might consider making for your friends. As a rule, like most Irish cooking, the dishes are not elaborate, but basic, home style you might say:

How do you can stewed tomatoes without them separating in the jars. I do them in the pressure cooker. My mother-in-law always did her by hot packing but that is not recomended anymore to do it that way.

Nancy, I want to say that you are an incredible woman. I also moved for similar reasons at the same time as you. I was totally exhausted having to move a lot myself. I am much happier in my new apt as you are in your new house with your little furry companions. Pets not allowed where I am. Best wishes to us both.

Hi Nancy,
I would like to see if anyone has a recipe for 1 minute boiled icing. A friend gave me the recipe some years back, but in my moving, I have lost -or misplaced it. I can't ask her for the recipe. It did not have confectioner's sugar, just granulated sugar and had buttermilk powder mixed with water (you could use buttermilk), butter and vanilla. I can't remember the amounts (and I am not sure that is all of the ingredients -although it seems to be). You boiled it for just 1 minute after it came to a boil, and then you beat it for a few minutes (I can't remember how long). It tastes so good! Thanks very much!! AtlantaPat

Marti in AL, I'm sending a recipe I got from a friend quite a few years ago. I think it would make a good casserole using your crabmeat. It's good with any kind of seafood. I love crabmeat, especially King crab, but it's not too available here in Indiana. :) I'm sending the recipe just as my friend gave it to me.

Fish Cobbler

1/4 C diced celery
1/2 T finely chopped onion
3 T flour
1 C crabmeat, or whatever
3 T butter
1 1/2 C milk
1 (5 3/4 oz) shrimp
1/2 t pimiento
salt & pepper

Saute celery and onion in butter until softened. Blend in flour and add milk gradually. Stir constantly over medium heat until thickened. Add crabmeat, shrimp or whatever fish you are using, along with seasonings and pimiento. Pour into a butter greased 4 cup casserole dish.

Crust
1 C flour
1/2 t salt
1/4 C shortening
1 t baking powder
3/8 C milk (approx)

Mix the dough for topping. Knead until light and roll to about 1/3 inch thickness. Place over casserole dish and cut to fit. Cut a few slits in the dough. Bake at 450? for 20-30 minutes until crust is brown and filling is bubbling.

Barb in De, I made your sausage and rice casserole yesterday. It was a hit with my DH. I thought he was going to eat the whole thing! I did cook it in the crockpot but cooked the rice first. I don't remember if it was you or someone else who helped me adapt it for a crockpot but it worked very well. I cooked it for about 4 hours as suggested.

In response to Amy B in Tenn, I do not know what an Eierkocher is, but I make baked eggs that are simular to what you discribed that are cooked in an Eierkocher

Baked Parmesan Eggs
This easy and elegant dish is quick and easy to make. I like baking eggs in the oven as it allows you to run off and do other things, while cooking eggs on the stove oftentimes requires some attention. Baking the eggs also allows you to add additional flavor and ingredients which is hard to do on the stove. This recipe combines crispy baked parmesan cheese with fresh herbs for a delicious and elegant breakfast dish. A pinch of your favorite dried herbs added before baking or fresh parsley added after can be used instead of the mixture listed below. The ingredients listed below are for one serving, the recipe can be doubled or multiplied as many times as you need.

1 tablespoon butter
2 tablespoons freshly grated Parmesan cheese
1 teaspoon minced fresh thyme
2 eggs
Salt
Freshly ground pepper
1 tablespoon snipped fresh chives or chervil (optional)

Preheat the oven to 325 degrees. Heavily grease a small individual casserole dish or ramekin (flatter is better) with half the butter. Sprinkle the Parmesan cheese in the dish, tilting the dish to coat the buttered sides with the Parmesan. Repeat with the thyme. Carefully break the eggs into the dish. Sprinkle with salt, pepper, nutmeg. Dot with the remaining butter. Bake for 12-18 minutes, or until the eggs are cooked the way you like them. Top with the snipped chives or chervil and serve immediately.
Makes 1 serving.

This is a most unusual recipe but I thought interesting enough to try. Great way to use left-over mashed potatoes, too.

Mashed Potato Salad
1 1-2 pounds potatoes, cooked and mashed
1/2 c. sweet onions, minced
1/2 c. sweet pickle relish
2 boiled eggs, chopped
1 c. sharp cheddar cheese, grated
salt and pepper
Mix and add:
3/4 c. sour cream
1/2 c. mayonnaise
Refrigerate several hours or overnight.
Top with additional grated cheese for color.

My husband's comment, "Very good but I have to get my mind set away from thinking of mashed potatoes being served cold."

For Dee in S. IL.
This is basically the "recipe" for the Oreo Lollipops. I found that the mint and peanutbutter Oreos work better than the double stuffed ones. I broke about 4 out of 5 cookies when using the double stuffed Oreos. I was using lollipop sticks that I purchases at my local cake and candy supply place. I don't know if softening the cookies in a microwave first would help with the cookies crumbling. That's why I am hoping that someone on this board might have a better idea for a filling.

The biggest sellers at our bake sale were the mint Oreos dipped in white chocolate and then sprinkled with crushed peppermints. For the peanut butter ones we dipped them in white chocolate and sprinkled with finely chopped peanuts.

We sold them for fifty cents each and we sold out of all of them within 2 hours and we had over 100 of them.

Oreo? Party Pops
20 popsicle or lollipop sticks
20 Oreo Double Stuff? cookies
1 (12-ounce) package of semi-sweet chocolate chips (we used white chocolate)
1 Tablespoon vegetable oil
Chopped nuts, colored sprinkles or miniature candies like M&M's? or Reese's Pieces?

To form Oreo? Pops:
Insert popsicle sticks into the cream center of each cookie. Set aside.
In a small saucepan over low heat, combine chocolate and oil until melted and smooth, stirring constantly.
Dip each cookie into the melted chocolate, coating evenly. Place dipped cookies on waxed paper and decorate with chopped nuts, sprinkles or candies.
Leave cookies on waxed paper until completely set, then wrap in plastic wrap and tie with a bow for gift-giving.
Makes 20 Oreo? Pops

Several years ago I had a recipe to make a peach pie filling that tasted just like dried peaches. This was made using cut up fresh peaches with the peeling on, sugar, vinegar and some spices. You would cook this until thick and then can. It had such a fresh taste, and OH SO GOOD. Of course I've lost my recipe. Do any of you ladies out there in Nancyland have this recipe. I would certainly be grateful if you do. Thanks so much Nancy for all that you do for us. You are a highlight of my day.
Oma in Tennessee

Nancy we are so glad that you are starting to settle in at the new place. We have not moved in 29 years and I know at that time it took us at least 6 months to settle in because my DH was traveling, the girls in scouts, school work, other activities and driving them every where. Also our house, which we had built, had no back yard. I know we decided to divide the back yard into ?'s and for the next 8 weeks we did the back yard. One week-end we would rack, pick up rocks, rack again, put down grass seed then straw. We would water that about every 2 days or so. Then in 2 weeks we would do another ? of the yard until it was done. Our back yard has always looked great. The whole family worked at getting the back yard in shape.

In he 8/21 newsletter Marti in AL was wanting a recipe for crab meat. I have a couple that are different and we do enjoy them when we have company. The first one is called a casserole but it is a dip that is really good and so simply to make.

1, 8 oz., pkg. cream cheese
1 teaspoon Worcestershire sauce
? teaspoon garlic salt
1 shot Tabasco

Mix this all together well. Place in small casserole and back 30 minutes at 350?. Great with crackers and cocktails.

I bought a small bag of dried large lima beans at the store last weekend. I wanted to make butter beans like what you buy in the cans at the store. Does anyone have a recipe for butter beans? I can't seem to find one at any of the sites I go to when I want a recipe.

For Betty T in Georgia
For many years, I was a certified bodyman. You really don't want to know about some of the stuff I had my hands in. I used a product called Invisible Glove. No matter what I got on my hands it washed off with soap and water. You can probably find it in one of the "chain" automotive stores. If they don't carry it, they might be able to order it for you. I don't remember if I used it to take glue off my hands but bondo came off when I washed my hands as usual. You use this like hand lotion before you get stuff on them.

Have you tried using toothpicks or even dental tools to hold these pieces in place til they set up? It might take some practice, but it wouldn't be as hard on your skin as some of these remedies! You can find the dental pick and the toothpicks at the dollar store, so it wouldn't cost much to try!

Nancy, I'm so glad you survived the move to a better "climate." I am also amazed that our newsletter came through as often as it did while you were doing it. I am looking forward to a new place of my own in the near future. It feels like I've been packing for months and have barely made a dent in it. I HATE moving! I like my present apartment and the folks that also live here, but it is too small and every year the rent gets higher than the "increase" in my social security check. I found out tonight that one fella with the same size apartment as mine is paying 729.00 per month because he has been here so long.

Mine has gone from 544.00 to 579.00 a month, and I didn't get even an inch more space than I had before. This next move will be the LAST!

This is for Tona in Bama regarding her Shrimp Fried Rice. I love it!! I've made it twice since 1st seeing it in the April 8th newsletter. I think this is as good or maybe better than getting it at a chinese restaurant. Thanks again for all you do to keep this such a wonderful group to belong to. I've only been a member since May but I go through all the earlier newsletters to find recipes. I've printed so many recipes I could make a cookbook. Glad your move went ok for you.

This is for Kyra in Florida on her cat. I can't answer for the urine, but when our cat started doing his stuff on the floor which was in the same room as the litter box, the Vet said she was asking for help. She has a intesinal infection (almost all the time) and that is when I have to take her and get medicine for her. Hope this helps, will at least give her a chance.

Nancy -- even tho I don't participate in it, I really enjoy your newsletter. Have saved a lot of recipes from it.
Ivey from Leavenworth, Kansas

Some one named kyra in florida was having trouble with her kitty urinating on everything fabric, even the bed, first has she taken kitty to the vet...mine was doing that and i was ready to get rid of her, when we found out she had a kidney infection, and this was her way of trying to tell me something was wrong.
